Pepper Chicken

PEPPER CHICKEN is a very simple and delicious dish which can be prepared using a few ingredients and less time.


INGREDIENTS

Chicken - 700–800gms

Butter - 1 table spoon (you can use ghee or oil as a substitute)

Coarse black pepper - 1 tablespoon ( tastewise but since it is pepper chicken, it has to be loaded with pepper )

Ginger garlic paste - 1 tablespoon

Optional - greeen chillies

Salt - as per taste

Coriander - garnishing

Lemon juice - 2 tablespoons ( AS PER TASTE )

METHOD
Add butter to the pan and add , chicken , salt , pepper , ginger garlic paste and chopped green chillies ( if you are using ). Saute till chicken is thoroughly coated with other ingredients.

Now , lower the heat and cover the pan (no need to add water). Leave it for 10–15 mins ( until it's done )

Check if it's cooked nicely and put it on high flame. Add lemon juice and turn the chicken so all the moisture is evaporated ( and the ingredients are sticking nicely into chicken).  Garnish with coriander and serve.

Paneer Manchurian

Paneer Manchurian is a very delicious dish. It is easy to make and is similar to Gobi Manchurian.


INGREDIENTS
200 grams Paneer or Indian cottage cheese
1/4 cup plain flour or maida
3 tbsps corn flour
Salt 
1/2 tsp red chilli powder
Water 
Oil

For Manchurian sauce
1 tbsp oil
1/2 to 3/4 tbsp minced ginger and garlic
1/4 cup chopped onion
1/4 cup chopped capsicum
1/4 cup chopped spring onion
1 tsp corn flour
Water
1 1/2 tbsps soy sauce
2 tbsps tomato sauce

Procedure
Heat oil in a kadai for deep frying Paneer.
While the oil heats, add corn flour, maida, salt, chilli powder to a bowl. Add water, just enough to make a free-flowing batter. The consistency should be moderately thick. 
Dip the paneer cubes in the batter and deep fry in hot oil.
Stir often and fry on medium heat until it's golden and crispy.
Add 1 tsp corn flour to a bowl and add water. Mix and make a lump-free batter. Keep it aside.

METHOD
Heat 1 tbsp of oil in a wide pan. Keep on a high flame.

Add ginger and garlic and saute for a minute.

Add onion and fry for a minute or two.

Add capsicum and saute for a minute.

Pour soy sauce, tomato sauce and corn flour batter. Make sure you stir the corn flour batter before pouring it into the pan.

Add more water if needed. Reduce the flame to medium.
Add pepper and salt.  

Turn off the heat. Add fried paneer and spring onion. Toss paneer in the sauce and coat evenly.

Butter Garlic Prawns

This is one of the most delicious, easiest and fastest dish made with least ingredients.


INGREDIENTS
  • 15 to 16 Big Sized Prawns Or 25 Medium Sized Prawns
  • Finely chopped garlic (as desired)
  • 2 tbsp Olive Oil
  • 1.5 tbsp Butter
  • Salt
  • 2 tbsp Black Pepper powder
  • Lime juice (as desired)


METHOD
Take fresh prawns, devein them and clean properly. 

Add some salt and keep them aside.

Take a pan and add oil and butter. Add garlic. Saute them for a minute. Add salt and black pepper as desired.
It's time to add the prawns and saute gently.

Cover the pan with a lid for 2 to 3 minutes on low heat. Keep stirring to avoid it from sticking to the bottom.

Remove the lid and keep on medium flame.

Check once if prawns are cooked.

Squeeze lime juice on it. Garnish with coriander leaves.

You can eat Butter Garlic Prawns with cheese-garlic bread or just pop in your mouth. It can be served with bread, rotis or rice.

Chilli Shrimp



Chilli Shrimp is a tasty and spicy dish with shrimp or prawns, marinated with ginger garlic paste, garam masala, red chili powder and tossed with capsicum, onion, tomatoes, soy sauce, tomato ketchup etc.



Recipe for Chilli Shrimp



Preparation time: 10 minutes



Ingredients

Shrimps

Ginger Garlic Paste -2 tsp

Chilli Powder -1 spoon

Garam Masala Powder -1/2 tsp

Corn flour -1 tbsp

Lemon juice -1 tbsp

Salt to taste


For Tossing

Capsicum -1 cup (sliced lengthwise)

Tomato -1 cup (Sliced lengthwise)

Onion - 1/2 cup(Sliced lengthwise)

Chilli sauce - 1 tbsp 

Soy sauce - 1 tbsp 

Ketchup- 1 or 2 tbsp

Spring onion


Method

Clean and devein the Shrimps.

Mix the Shrimps wit all the marination ingredients and let it sit for an hour.

Heat oil, saute the onions, tomatoes and capsicum. Let the veggies stay crunchy.

Add chili sauce and little soy sauce.

Add the marinated shrimp to the sautéed vegetables, close with a lid and let it cook on a low flame.

After couple minutes, mix it together and let it cook for another minute

Add salt

Garnish with spring onion



Your Chilli Shrimp is ready! 



Serve the chilli shrimp with rice, bread or rotis.



Do not overcook the Shrimps.

Banana Pancake

Being a foodie, I like to try and cook simple but delicious dishes. I love to taste different dishes and prepare them on my own. Banana Pancake is one of them. So, I'm sharing this simple recipe of Banana Pancake with you.

1 & 1/2 cups white whole wheat flour (can use whole wheat or all-purpose)
1 tablespoon light brown sugar
2 teaspoons baking powder
1/4 teaspoon salt
1/2 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
1 cup buttermilk
1 large egg, slightly beaten
3 tablespoons butter, melted and cooled
1 tablespoon honey
1 teaspoon vanilla extract
2 ripe bananas, mashed (about 1 cup mashed banana)
Sliced bananas, butter, and maple syrup, for serving, if desired
DIRECTIONS:
In a medium bowl, whisk together flour, brown sugar, baking powder, salt, cinnamon, and nutmeg. Set aside.
In a small bowl, combine buttermilk, egg, melted butter, honey, vanilla, and mashed bananas.
Add the banana mixture to the dry ingredients and stir until just combined. The batter will be lumpy.
Heat a griddle or pan to medium low heat. Coat with cooking spray. Drop about a 1/4 cup of batter onto heated skillet. Cook until surface of pancakes have some bubbles and a few have burst, 1 to 2 minutes. Flip carefully with a spatula, and cook until browned underneath, 1 to 2 minutes more. Continue making pancakes until the batter is gone.
Serve pancakes with sliced bananas, butter, and maple syrup or honey if desired.
And your Banana Pancake is ready!
